Lavender Sugar Cookies

Ingredients:
- 1 Cup butter (softened)
- 1 ½ Cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 ⅔ Cup flour (unsifted)
- 1 teaspoon cream of tartar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup of lavender sugar for topping (see below)
Instructions:
Preheat oven to 400 degrees. In a mixing bowl, cream butter and sugar. Beat in eggs and vanilla. Stir in flour cream of tartar, soda and salt. Shape dough into walnut sized balls. Roll the balls in lavender sugar. Place 2 inches apart on ungreased baking sheets. Bake 8 to 10 minutes or until edges are set. Makes about 44 cookies.
How to make lavender sugar:
To make lavender sugar, put the sugar and lavender in a food processor and grind until the lavender is in bits. About 30 seconds pulsed. Another option is to grind lavender using a mortar and pestle and then mix in with sugar. You can make the lavender sugar stronger or lighter depending on your taste by adjusting the amount of lavender in the sugar.
